Tortellini Soup

Heat the olive oil in a large pot over medium heat. Add the onion, carrots, celery, salt, and several grinds of pepper. Sauté for 8 minutes, or until the vegetables begin to soften.
Add the garlic, stir, and cook for 1 minute, until fragrant.
Add the tomatoes, vegetable broth, thyme, and red pepper flakes. Simmer for 20 minutes, until the vegetables are tender and the broth is flavorful.
Add the tortellini and cook for 2 to 4 minutes, or according to the package instructions, until tender.
Stir in the kale and cook for 1 to 2 minutes, until wilted.
Remove from heat and stir in the lemon juice. Season to taste with salt and pepper.
Serve garnished with parsley and Parmesan, if using.
