Combine the soy sauce, 1/2 cup water, brown sugar, rice vinegar, sesame oil, minced garlic, and grated ginger in a small saucepan.
Bring the mixture to a simmer over medium heat, stirring until the sugar dissolves completely.
In a separate small bowl, whisk together the cornstarch and 2 tablespoons of cold water to create a slurry.
Pour the cornstarch slurry into the simmering sauce while whisking constantly.
Continue to cook and whisk for 1 to 2 minutes until the sauce thickens to your desired consistency.
Remove the sauce from the heat. It will thicken more as it cools.
