Drain the 16 oz can of salmon, reserving 1/4 cup of the liquid. Gently flake the salmon, removing any bones or skin.
In a large mixing bowl, combine the flaked salmon, 1 large egg, and 1/2 cup of all-purpose flour. Mix thoroughly.
Stir in 1 cup of instant potato flakes, 1/4 cup of finely chopped yellow onion, and 1/4 teaspoon of black pepper.
In a small bowl, whisk together 1 teaspoon of baking powder and the reserved 1/4 cup of salmon liquid until smooth.
Gently fold the baking powder mixture into the salmon mixture until just combined. Do not overmix.
Shape the mixture into 24 small croquettes. (Alternatively, make larger croquettes for fewer servings.)
Heat 2 cups of vegetable oil in a large, heavy-bottomed skillet or deep fryer to 350°F (175°C).
