Instructions
Start by boiling potatoes, cauliflower, peas, and carrots until soft. Drain the water and lightly mash them using a potato masher. Don’t make it too smooth; leaving some chunks enhances texture.
Heat a pan and melt 2 tbsp butter with 1 tbsp oil. Add chopped onions and sauté until golden. Add ginger-garlic paste and fry until the raw smell disappears.
Lower the heat and add:
Add the boiled vegetables to the masala base. Mix well and start mashing everything with a masher. Add water gradually until you reach a smooth, creamy consistency.
Add another spoon of butter for extra richness and stir well. Garnish with fresh coriander. Your delicious, creamy bhaji is ready.
