Rinse the rice under cold water until it runs clear, then drain and set aside.
In a pot, heat the vegetable oil over medium heat. Add the chopped onions and bell pepper; sauté until soft, about 5 minutes.
Add the blended tomatoes and tomato paste to the pot and cook for about 10 minutes, stirring occasionally, until the sauce thickens.
Stir in the thyme, curry powder, salt, and pepper. Mix in the rinsed rice, ensuring it is coated with the sauce.
Pour in the chicken broth or water and bring to a boil. Reduce heat to low, cover, and simmer for 20-25 minutes until the rice is tender and liquid absorbed.
Fluff the rice with a fork and let it sit for a few minutes before serving. Optionally, add your choice of cooked protein.
