Vegetarian Lasagna

My cozy vegetarian lasagna is the perfect weeknight dinner for extra cold nights.

Preheat oven to 350°. In a large bowl, stir until combined ricotta, 2 cups mozzarella, 1 cup Parmesan, Italian seasoning, and egg. Season with 1/2 tsp. salt, and a few grinds (6 to 8) pepper.
Grease a 9"-x-13" baking dish with cooking spray. Spread 1/2 cup marinara on bottom of dish. Add a layer of noodles, then ¾ cup sauce and ¾ cup ricotta/cheese mixture. Repeat 4 to 6 times (depending on how deep your pan is), ending with sauce. Top with remaining 1 cup mozzarella.
Spray foil with cooking spray. Cover lasagna (sprayed-side down), and bake for 35 minutes. Remove foil and raise temperature to 400°. Cook until cheese has melted, about 10-15 minutes more. Let rest for 15 minutes.
Garnish with basil and parsley before serving.
