In a medium saucepan add the milk, cream, and vanilla. On a low to medium heat, bring to a boil, remove and set aside to infuse for 15 mins.
Meanwhile, remove the crusts off the bread and butter the slices of bread on both sides, and sprinkle lightly with the cinnamon. On a chopping board cut the pieces into quarters. Set aside.
In a medium bowl combine the eggs and golden caster sugar. Next, gradually add the vanilla-infused cream to the bowl and whisk briefly until combined. Add the lemon zest, set aside
Lightly butter a shallow ovenproof dish approximately 20cm x 25cm. Layer half of the bread on the bottom of the dish, and sprinkle over half your mixed dried fruit of choice. Next repeat with the remaining bread and dried fruit. Pour the custard mixture evenly over the bread and leave to soak in the fridge for at least 30mins. You can use your hands to push down the bread into the custard, to help the custard fully soak into the bread.
Preheat the oven to 180°C (160°C Fan). When ready to cook, sprinkle with the demerara sugar and cinnamon and bake for 30 – 35 minutes until risen and golden brown.
