Marinated salmon picks up all kinds of savory flavors, then is seared in a pan. The remaining marinade is cooked into a thick sauce that you'll want to sop up.

Ingredients
Instructions
Whisked together soy sauce, mirin, sake, and honey in a bowl until honey is dissolved. Pat salmon fillets dry with paper towels. Season with salt and pepper.
Heat oil in a large nonstick skillet over medium-high heat. Cook salmon, skin side down, until skin is crispy, 5 to 7 minutes. Flip and cook 1 minute (salmon will not be cooked all the way through). Transfer salmon to a plate and pour off excess oil.
Add teriyaki mixture, garlic, and ginger to skillet. Bring to a boil and cook until reduced by a third, 3 to 4 minutes. Return salmon to skillet, skin side up, and cook until just cooked through, 1 to 2 minutes.
