Heat 1 tbsp olive oil in skillet over medium-high. Add 1 lb ground beef, breaking into crumbles. Cook until browned (5-6 min). Drain fat, leaving 1 tbsp.
Add spices (1 tbsp chili powder, 1 tsp cumin, 1 tsp smoked paprika, ½ tsp garlic powder, ½ tsp onion powder, ½ tsp salt, ¼ tsp black pepper) to beef, stir to coat. Cook 1-2 minutes until fragrant.
Preheat oven to 375°F. Line baking sheet with parchment.
Layer 12 oz tortilla chips, half the cheese (1 cup cheddar and ½ cup Monterey Jack), beef, ½ cup black beans, then remaining cheese (1 cup cheddar and ½ cup Monterey Jack).
Bake 5-7 minutes until cheese melts.
Top with fresh toppings (½ cup diced tomatoes, ¼ cup sliced jalapeños, ¼ cup chopped cilantro, ½ cup sour cream, ½ cup guacamole). Serve immediately.
