In a large bowl, combine grated paneer, mashed potatoes, cornflour, cashew powder, raisins, ginger paste, green chili, salt, and garam masala. Knead until uniform.
Shape into balls and chill for 15 minutes.
Fry in oil at 325–350°F (160–175°C) until golden. Drain on paper towels.
Boil onions, tomatoes, ginger, garlic, and cashews in 2 cups water for 10–12 minutes. Blend into a smooth paste.
Heat oil or ghee in a pan. Add cumin seeds, let sizzle, then add blended paste. Cook until oil separates.
Stir in water, kasuri methi, garam masala, salt, and sugar. Simmer for 5–7 minutes.
Turn off heat and fold in cream.
Add koftas to warm gravy just before serving.
