Ingredients
Instructions
Heat the chicken stock and dissolve the gelatin into it. Pour into a shallow dish and refrigerate until fully firm.
In a bowl, mix ground pork, soy sauce, sesame oil, ginger, green onions, salt, and white pepper.
Dice the chilled gelatinized stock and gently fold it into the pork mixture.
Combine flour and warm water to form a smooth dough. Knead for 8 minutes, then rest for 30 minutes.
Roll dough into a log, cut into small pieces, and roll each into thin circles.
Place about 1 tablespoon filling in the center of each wrapper and pleat to seal tightly.
Line a bamboo steamer with parchment paper or cabbage leaves and arrange dumplings with space between them.
Steam over simmering water for 8 to 10 minutes until wrappers are translucent and filling is cooked through.
Carefully remove from steamer and serve immediately.
