Homemade Waffles
My homemade waffles are light and fluffy, ultra-delicious, and a classic homemade breakfast staple- you'll never use a different waffle recipe again! They can be made in advance and are perfect for any day of the week! Top them with some whipped cream or syrup and you are ready to start your day!1x recipe yields 6-8 waffles (depending on your waffle iron). Add your 2 large eggs into a large bowl and then whisk them until light and fluffy (*see note).
In the same bowl, add your 1¾ cups milk, ½ cup vegetable oil (or butter), and 1 tsp vanilla extract and then stir to combine.
Next, stir in the 2 Tbsp sugar (or syrup), 4 tsp baking powder, and ¼ tsp salt, plus the optional ½ tsp cinnamon and ¼ tsp nutmeg, if using. Mix lightly to combine then add the 2 cups all-purpose flour and mix again until it is just combined (lumpy is OK), do not over-mix it.
Cover the batter and allow it to rest for 30 minutes before cooking your waffles. It can also be refrigerated at this point for another day. *Remember to start preheating your waffle iron about 5 minutes before you're ready to make a fantastic waffle breakfast.*
Once your waffle iron is fully heated, spray it with some nonstick cooking spray. Pour the batter into the waffle iron and cook until the waffles have turned a golden-brown color (*see note). This could take about 3-5 minutes, depending on your waffle iron.
Repeat with the remaining batter and serve immediately.
