Mash the bananas with a fork in a bowl until smooth.
Add the egg, oil, sugar, and vanilla to the mashed bananas. Whisk until combined.
In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Gently fold into wet mix. Do not overmix.
Lightly grease a mini loaf pan or silicone mold that fits your air fryer. Pour in the batter.
Bake at 320°F (160°C) for 25–30 minutes in the air fryer. Check with a toothpick in the center; it should come out clean.
