Finally, a bran muffin that actually tastes good! This recipe is full of fiber and has a secret ingredient (coconut oil) that makes all the difference.

Preheat the oven to 450°F (230°C). Lightly spray a 12-cup muffin pan with nonstick spray or line with paper liners.
In a medium mixing bowl, combine 1 1/2 cups 100% all bran cereal and 1 cup buttermilk. Let soak for 10 minutes, until the cereal softens.
Add 1/3 cup melted coconut oil, 1 large egg, 2/3 cup brown sugar, and 1/2 teaspoon vanilla extract to the bowl. Stir until well combined.
Add 1 cup all-purpose flour, 1 teaspoon baking soda, 1 teaspoon baking powder, and 1/2 teaspoon salt. Stir just until incorporated. The batter will be thick.
Divide batter evenly among the muffin cups, filling each almost to the top.
Bake at 450°F for 5 minutes. Without opening the oven door, reduce oven temperature to 350°F (175°C) and continue baking for 8 to 10 minutes, or until a toothpick inserted into the center comes out clean.
Remove muffins from the pan and transfer to a wire rack to cool.
