In a large bowl, combine oats, olive oil, honey, nuts & seeds, cinnamon, salt, vanilla, and nutmeg.
Spread the mixture in an even layer on a baking sheet.
Bake for 20-25 minutes, stirring halfway through.
Add dried fruit after removing from the oven if you are adding.
If you're adding coconut flakes, sprinkle it on halfway through to get that lightly toasted perfection.
Let cool completely before storing.
