Ingredients
Instructions
In a medium-sized bowl, whisk together the corn starch and water. Add soy sauce, honey, toasted sesame oil, chicken broth, and red pepper flakes. Set aside.
Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the chicken and season with salt and pepper. Cook for 3-5 minutes or until fully cooked. Remove the chicken from the skillet and set aside.
Reduce the heat to medium and add the remaining tablespoon of olive oil to the skillet. Add the broccoli, bell peppers, and carrots. Cook for 3-4 minutes until the veggies are crisp-tender.
Add the minced ginger and garlic, cooking for an additional minute to release the flavors.
Return the chicken to the skillet. Stir in the stir fry sauce and mix well.
Bring the sauce to a boil, stirring occasionally, and let it boil for about one minute until the sauce thickens.
Serve the chicken stir fry with rice or chow mein noodles, if desired.
