The BEST Dorito Casserole is a legendary layered baked dish built from crunchy Nacho Cheese Doritos, seasoned ground beef in a rich double-soup cream sauce, and plenty of melted Mexican cheese. It comes together with pantry staples in about 30 minutes and feeds a crowd without any fuss.

Preheat your oven to 350°F. Spray a 9x13 inch baking dish generously with non-stick cooking spray and set aside.
In a large pan over medium-high heat, brown the ground beef, breaking it apart as it cooks. Drain off the excess fat. If using taco seasoning, stir it in now until fully combined with the meat.
Add both cans of soup, the evaporated milk, and the diced green chiles directly to the pan with the cooked beef. Stir everything together over medium heat until fully combined and bubbling gently. Do not rush this step — the sauce should be hot and bubbly before layering.
Add half the bag of Doritos to the bottom of the prepared baking dish. Crumble them lightly as you add them — aim for rough, irregular chunks rather than fine crumbs. Spoon half of the meat mixture evenly over the chips, then sprinkle about 1 cup of shredded Mexican cheese on top.
Repeat the layers: add the remaining Doritos (crumbled lightly), the rest of the meat mixture, and finish with the remaining shredded cheese. Add extra cheese between or on top of layers if desired — there is no such thing as too much here.
Bake uncovered for about 20 minutes, or until the cheese is fully melted and the edges are bubbling. Let the casserole rest for 5 minutes before serving. Top with sour cream, green onion, tomatoes, avocado, or salsa as desired.
