Perfect Homemade Fried Rice
This restaurant-quality fried rice is made with cold day-old rice, fluffy scrambled eggs, crisp vegetables, and the perfect blend of savory seasonings. Ready in just 25 minutes, it's better than takeout and completely customizable with your favorite proteins and vegetables.

Break up cold rice with your hands to separate any clumps, dampening hands slightly to prevent sticking
Heat 1 tablespoon butter in large wok or skillet over medium-high heat until melted and shimmering
Add beaten eggs, let sit 3-5 seconds, then scramble gently until just cooked; remove to a plate and wipe pan clean
Add 1 tablespoon butter to pan over high heat; add diced onion and white parts of scallions, stir-fry 30 seconds
Add minced garlic and cook 15-20 seconds, stirring constantly to prevent burning
If using fresh vegetables, add now and cook 2-3 minutes until tender
Add final tablespoon of butter, then immediately add cold rice; break up any clumps with spatula
Let rice sit undisturbed 30 seconds to crisp, then toss; repeat this process for 3-4 minutes
If using frozen peas and carrots, add now and stir to combine
Pour soy sauce and oyster sauce over rice, toss vigorously to coat all grains evenly
Season with white pepper, taste and add salt if needed
Return scrambled eggs to pan, breaking into smaller pieces and folding into rice
Drizzle sesame oil over everything and toss to combine
Remove from heat, garnish with green parts of scallions, and serve immediately
