To make the filling, in a bowl add all the ingredients together. Add chicken, cabbage, garlic, ginger, carrot, spring onion, soy sauce, sesame oil, hoisin sauce, salt & pepper.
Place a tablespoon of filling at the center of the round wrapper.
Apply water on the edges of the wrapper.
Fold the wrapper over the filling, making sure there is no air trapped, forming a half-moon shape.
Place the dumplings on a flat surface dusted with flour and make them sit on the flat surface, making the base of the potstickers broader, such that the bottom of the potstickers flattens.
Heat a wide bottom pan with a little oil, making sure that the pan is evenly covered with oil.
Arrange the potstickers leaving some space between them and cook in batches.
Let them fry for 2 minutes, then add 1/4 cup water to the same pan, cover the pan, and let the potstickers cook till the water evaporates.
Remove the lid and let the potstickers cook till the bottom of the potstickers gets crisp.
Serve these potstickers with your favorite dipping sauce, chili oil, or sauce.
