How to Make Pupusas
Boil the Cabbage: Fill a large pot with water and bring it to a boil. Add the halved cabbage and allow it to cook until soft, for about 5-7 minutes. Reserve 1/2 cup of the cooking water and drain the rest.
Prepare the Curtido: In a mixing bowl, combine the cooked cabbage with the sliced carrot, onion, a pinch of salt, white vinegar, and the reserved hot water. Let this mixture sit for 15-20 minutes to develop its tangy flavor.
Mix the Filling: In another bowl, thoroughly combine the refried beans, chicken seasoning, and mozzarella cheese.
Make the Dough: In a large mixing bowl, combine masa harina and salt. Gradually add warm water, one cup at a time, using your hands to knead until you have a soft and pliable dough.
Shape the Pupusas: Take a small handful of the dough and flatten it into a disc using your palms. Create a shallow cup in the center and spoon 1-2 tablespoons of the bean mixture inside.
Seal and Flatten: Carefully fold the edges of the dough over the filling to create a ball, then gently flatten it back into a disc.
Cook the Pupusas: Heat 1 tablespoon of avocado oil in a skillet over medium heat. Add three pupusas and cook for about 2-3 minutes on one side, flipping until lightly golden brown, about 1-2 minutes more.
Serve and Enjoy: Arrange the warm pupusas on a plate and top generously with the curtido.
