Beef Nachos

These healthier beef nachos use baked tortilla chips, lean ground beef, and reduced-fat cheese for a lighter version of the classic game day favorite. Load them up for sharing.

Preheat your oven to 400°F (200°C). Line two large baking sheets with parchment paper.
In a non-stick pan over medium heat, cook 1 lb of lean ground beef with 1 diced small onion until the beef is crumbled and the onion is translucent. Drain any excess fat.
Reduce the heat to low and add the taco seasoning mix to the beef. Stir well to combine and cook for a few more minutes until the flavors meld.
Divide the baked tortilla chips evenly between the two prepared baking sheets, spreading them out in a single layer.
Spoon the refried beans onto each tray of chips in dollops, repeating the process for both trays.
Evenly distribute half of the seasoned ground beef mixture and half of the shredded reduced-fat cheese over each tray of nachos.
Place the baking sheets in the preheated oven and bake for 10-15 minutes, or until the cheese is melted and bubbly.
Remove from the oven and top with diced tomatoes and finely chopped green onions.
