Season the pork shoulder and chicken breast with salt and pepper. Sear them in a large pot over medium-high heat until browned, about 4-5 minutes per side. Set aside once done.
In the same pot, add the chopped smoked bacon and let it render out its fat. Sauté the onion, celery, and carrot for 5-7 minutes until softened. Add minced garlic and cook for an additional 30 seconds until fragrant.
Stir in the chopped tomatoes and cook until they start breaking down, about 3-4 minutes. Deglaze the pot by adding apple cider vinegar and Worcestershire sauce, scraping up any browned bits.
Return the seared meats to the pot and pour in the chicken stock and tomato passata. Bring to a gentle boil, reduce heat, and cover to simmer for about 40 minutes.
Once the chicken is tender, shred it using two forks and add it back into the stew. This helps meld all those delicious flavors together.
Add the frozen corn, lima beans, and diced potatoes to the pot. Sprinkle in paprika and brown sugar, then simmer uncovered for another 20-25 minutes until the vegetables are tender and the stew thickens.
If the stew is too thick, add a bit of water or stock to reach your desired consistency. Feel free to mash some potatoes against the pot's side to help thicken if needed.
Allow the stew to rest for 10-15 minutes, covered and off heat. Garnish with fresh parsley before serving hot with cornbread or rice.
