<p>Heat oven to 375°F. Cut squash in half lengthwise with sharp knife.</p>
<p>Scoop out and discard seeds.</p>
<p>Place squash halves cut-side-down in an ungreased baking sheet with sides or a 3-quart baking dish.</p>
<p>Bake 45 to 50 minutes or until fork pierces flesh of squash easily. Remove squash from oven. Carefully turn squash over to cool for 10 minutes.</p>
<p>Scrape insides out with fork, then transfer into serving bowl.</p>
<p>Gently stir in butter, Parmesan cheese, salt, and pepper.</p>
<p>Garnish with parsley.</p>
