Ingredients
Instructions
Pork belly – 1 lb
Green cabbage – ½ head
Udon noodles – 12 oz
Chicken broth – 4 cups
Soy sauce – 2 tbsp
Garlic – 3 cloves
Vegetable oil – 1 tbsp
Slice the pork belly into ½-inch thick strips.
Heat the vegetable oil in a large pot over medium-high heat until it shimmers, about 2 minutes.
Add the pork belly strips to the pot and cook for 5 minutes, stirring occasionally, until they are browned on all sides.
Mince the garlic cloves finely.
Add the minced garlic to the pot with the pork and cook for 1 minute, stirring constantly, until fragrant.
Core and thinly slice the green cabbage into shreds.
Add the shredded cabbage to the pot and cook for 5 minutes, stirring occasionally, until it begins to wilt.
Pour in the chicken broth and soy sauce, then bring the mixture to a boil over high heat.
Reduce the heat to medium-low and simmer for 15 minutes, uncovered, to allow the flavors to meld.
While the broth simmers, cook the udon noodles according to the package instructions until al dente, then drain them.
Divide the cooked udon noodles evenly among four bowls.
Ladle the hot pork and cabbage broth over the noodles in each bowl.
