Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
In a saucepan over medium heat, combine sliced peaches, 1/2 cup granulated sugar, 1/2 cup brown sugar, lemon juice, and optional cornstarch. Cook for 5–7 minutes until peaches soften and sugars dissolve. Remove from heat.
In a large bowl, whisk together flour, remaining 1/2 cup sugar, baking powder, and salt. Stir in milk and vanilla extract until smooth.
Pour melted butter into the prepared baking dish. Pour batter over the butter without stirring.
Spoon peach mixture evenly over the batter. Do not stir.
Sprinkle the top with cinnamon and nutmeg.
Bake for 40–45 minutes or until the top is golden brown. Broil for 2–3 minutes at the end for extra crispiness, if desired.
Let cool for at least 10 minutes before serving. Serve warm with vanilla ice cream or whipped cream.
