  • For a lighter broth, use ¼ cup (60 ml) heavy cream or omit it. Yukon Gold potatoes hold their shape well and give the stew a creamy texture. Russet potatoes can also be used, but they will break down more easily and thicken the broth. Cut the chicken and vegetables into evenly sized pieces so they cook at the same rate.
