The Best Chicken Biryani
This chicken biryani recipe combines tender, marinated chicken with fragrant basmati rice and a blend of spices. Perfect for a special dinner or a festive occasion, it's a dish that promises to delight.

Marinate the chicken with yogurt, ginger-garlic paste, biryani masala, turmeric, and red chili powder for at least 1 hour in the refrigerator.
Heat oil in a large pot over medium heat. Add cumin seeds, cardamoms, cloves, cinnamon sticks, and bay leaves. Sauté until fragrant, about 2 minutes.
Add sliced onions and fry until golden brown, about 10 minutes. Remove half of the onions and set aside for garnish.
Add tomatoes to the pot and cook until they soften, about 5 minutes. Add the marinated chicken and cook until the chicken is browned, about 10 minutes.
Drain the soaked rice and add it to the pot. Stir gently to mix with the chicken and spices.
Pour in 4 cups of water and add salt to taste. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until the rice is cooked and the liquid is absorbed.
Once cooked, remove from heat and let it rest, covered, for 10 minutes. Fluff the biryani with a fork, garnish with the reserved fried onions, mint, and coriander leaves before serving.
