Preheat the oven to 350 degrees Fahrenheit and lightly grease a 9-inch square casserole dish.
Warm the olive oil in a large skillet over medium heat. Then sauté the onions until soft (3-4 minutes).
Add the green chilies, potatoes, 1/2 teaspoon salt, and 1/2 teaspoon black pepper and continue to sauté for 8-10 minutes until the potatoes are starting to soften.
Transfer the mixture to the prepared casserole dish and spread it out evenly.
In a medium mixing bowl, beat the eggs with the remaining salt and pepper. Pour the egg mixture over the potatoes and sprinkle the cheddar cheese on top.
Bake for 35-40 minutes, or until eggs and potatoes are cooked.
Optional: nestle hardboiled eggs on top for serving
