For the Batter
Soak urad dal and fenugreek seeds in warm water for 4-6 hours until plump.
Drain and blend soaked dal and seeds with ½ cup water until smooth.
In a large bowl, whisk together rice flour, salt, and ½ cup warm water. Fold in dal paste until smooth.
Cover and let batter rest in a warm spot for 8-12 hours until doubled and tangy.
For Steaming
Grease idli molds with oil.
Fill molds three-quarters full and steam at 212°F for 10-12 minutes.
Rest idlis for 2 minutes before gently unmolding.
Brush with ghee if desired.
