Instructions
Lightly grease a 9×13 inch baking dish or a similar 2.5 to 3-quart capacity casserole dish. Set it aside. If you’re worried about bubbly juices overflowing, you can place the baking dish on a larger baking sheet lined with parchment paper.
Sprinkle the 1/2 cup (or adjusted amount) of granulated sugar, 3 tablespoons of cornstarch (or flour), 1 tablespoon of lemon juice, 1 teaspoon of vanilla extract, and 1/8 teaspoon of salt over the berries.
Gently toss everything together until the berries are evenly coated with the sugar and cornstarch mixture. Be careful not to mash the more delicate berries like raspberries.
Pour the berry mixture evenly into your prepared baking dish. Spread it out so it forms a relatively level layer.
Whisk these dry ingredients together until they are well combined and there are no large clumps of brown sugar.
Add the 1/2 cup of cold, cubed unsalted butter to the dry ingredients.
Using a pastry blender, your fingertips, or two knives, cut the butter into the flour mixture. Continue until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining. It’s important that the butter stays cold to ensure a crisp, not greasy, topping.
If using, stir in the 1/2 cup of chopped nuts (pecans or walnuts) until they are evenly distributed throughout the topping.
Bake for 35-45 minutes. The exact time will depend on your oven and whether you used fresh or frozen berries (frozen berries may take closer to 45-50 minutes).
The crisp is ready when the topping is a deep golden brown and beautifully crisp, and the berry filling is bubbling thickly around the edges and often through the topping in some spots. The aroma filling your kitchen will be an unmistakable sign of deliciousness!
Let the crisp rest on a wire rack for at least 15-20 minutes before serving. This crucial resting period allows the molten berry juices to thicken slightly as they cool, preventing a runny mess when you serve it and making it easier to scoop.
