If using leftover pulled pork and rotisserie chicken, simply shred them and set aside. This is the easiest route!
If using bacon: In a large, heavy-bottomed pot or Dutch oven, cook the diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving about 2 tablespoons of bacon fat in the pot (discard any excess). If not using bacon, simply add 2 tablespoons of olive oil or vegetable oil to the pot.
Add the minced garlic (and chopped green bell pepper, if using) and cook for another 1-2 minutes until fragrant, being careful not to burn the garlic.
Pour in the chicken broth. Stir everything well to combine.
Season generously with salt and freshly ground black pepper. Remember that the meats and broth may already contain salt, so taste as you go.
If you want a slightly richer finish, stir in the 2 tablespoons of unsalted butter until melted.
Stir in the reserved crispy bacon (if used) and a few dashes of your favorite hot sauce, if desired.
