Squeeze thawed spinach thoroughly to remove moisture.
Cook onions and green onions in olive oil until soft, then add garlic.
Combine spinach, sautéed veggies, herbs, salt, pepper, eggs, feta, and optional ricotta.
Keep sheets covered with a damp towel. Brush baking dish with melted butter or olive oil.
Add 8 phyllo sheets, brushing each with butter or oil.
Spread spinach mixture evenly over layered phyllo.
Add remaining 8 phyllo sheets, brushing each with butter. Tuck edges.
