Heat olive oil in a large heavy-bottomed pot over medium heat. Add onions and garlic and cook for about 6 minutes, until softened.
Add the ground beef and salt. Cook, breaking up the meat with a spoon, for 5 minutes, or until no longer pink.
Stir in ancho chili powder, chipotle powder, cumin, and oregano. Cook for 1 minute, then add diced bell peppers.
Purée the tomatoes in a blender for about 5 seconds, then add them to the pot with the water. Bring to a boil.
Reduce heat and simmer for 45 minutes to 1 ½ hours, stirring occasionally. Add water in ½ cup increments if the chili becomes too thick.
Stir in the beans and corn. Cook for 5 minutes, until heated through. Taste and adjust seasoning as desired.
Serve hot with your choice of garnishes.
