Cook the Vegetables and Sausage:Heat olive oil in a large pot or Dutch oven over medium heat.Add the onion, bell pepper, celery, and garlic. Sauté until softened (about 5 minutes).Add the sausage (if using) and cook for another 5 minutes until browned.
