Soak kabuli chana overnight. Boil with spice potli in a pressure cooker for 4-5 whistles. Remove potli, save the water, and keep chole aside.
Add dry spices, ginger, green chilli. Pour hot ghee on top, cover, and rest. Add saved chole water and simmer for 8-10 minutes while mashing slightly.
Mix flour, ajwain, salt, and oil. Add water and knead into dough. Rest for 20–30 minutes.
Heat oil, add hing, green chilli, ginger, pounded masala. Add cashew, spices, green peas, and water. Mix in mashed potato, paneer, coriander, and spices.
Roll dough, make cone, fill stuffing, seal edges, and deep fry till golden.
Whisk curd with cream, black salt, and powdered sugar till smooth.
Layer chole, crushed samosas, dahi, chutneys, onions, and toppings. Serve immediately.
