Heat the oven to 425 degrees Fahrenheit. Drizzle 1 tsp butter or bacon grease into each cup of a popover pan. Place in the oven as the oven is heating up. Whisk the 2 tbsp butter, eggs, milk, salt, and 2 tbsp chives in a bowl. Add in the flour and whisk until the batter is smooth. Carefully remove the pan from the oven and pour in the batter to fill each cup halfway (it will sizzle when it touches the hot oil). Top the batter with cheese and bacon and place in the oven for 15 minutes, then lower the heat to 325 degrees Fahrenheit and bake for 15 to 20 minutes more. *DO NOT OPEN THE OVEN before 30 minutes, or the popovers will collapse! Top each popover with sour cream and fresh chives. Serve and enjoy!
