Sauté Onion and Sausage Drain all but 2 tablespoons of the bacon grease. Sauté diced onion and chicken sausage in the skillet for about 3 minutes, or until the onion is soft and translucent. Remove from heat.
Combine Ingredients In a large bowl, mix together the cooked bacon, sautéed onion and sausage, eggs, cottage cheese, hash browns, Mexican blend cheese, white cheddar cheese, salt, and pepper. Stir until well combined.
