In a large skillet, add butter, celery, onions, and mushrooms. Sauté until veggies are soft and the liquid is cooked out completely.
Add breakfast sausage to the skillet and cook until browned and crumbled.
Season with salt, pepper, garlic powder, and poultry seasoning to taste.
Place cubed French rolls in a 9x13 casserole dish or large mixing bowl.
Add the cooked sausage and vegetable mixture to the bread and toss to combine.
Whisk eggs and milk together, then pour over the bread mixture and stir well.
Pour chicken or turkey broth over the stuffing mixture and stir to combine. The mixture should be very wet but not floating in liquid.
Bake at 375°F for about 45 minutes until the center is set and the top is browned. Cover loosely with foil if browning too quickly.
Optionally, drizzle melted butter on top before baking for extra crispiness.
Let stuffing rest for 10 to 15 minutes before serving.
