Prep & Season
Bring 12 oz T-Bone Steak to room temperature for 30 minutes. (Optional: Preheat oven to 400°F / 205°C if using a thick-cut steak for an oven finish).
Heat high-smoke-point 1 Tbsp cooking oil or beef tallow in a 12-inch cast-iron skillet over medium-high heat until beginning to smoke.
Pat steaks completely dry with paper towels. Season all sides (including the edges) generously with ½ Tbsp steak seasoning, patting it down firmly.
Sear & Baste
Place steaks, 3 cloves garlic, and 4 sprigs fresh rosemary in the hot skillet. Sear undisturbed for 4 minutes until a deep crust forms.
Flip the steak. Add 1 Tbsp butter, tilt the pan, and continuously spoon the melted herb butter over the steak for 3 to 4 minutes.
Finish & Rest
Remove from heat when a meat thermometer reads 130°F (54°C) for medium-rare, or finish in the oven for a few minutes if thick-cut. Use tongs to sear the edge fat strip for 30 seconds.
Transfer to a plate, drizzle with remaining pan juices, and tent loosely with foil. Rest for 10 minutes before serving.
