Cook noodles by boiling salted water. Add 8 oz fresh noodles and cook for 4-6 minutes. Drain and toss with vegetable oil.
In a large pan, heat 1 tbsp vegetable oil over medium heat. Add ½ lb ground pork and cook until browned, about 5-7 minutes.
Stir in 2 minced garlic cloves and 1 tbsp minced ginger. Sauté for 1-2 minutes until fragrant.
