Homemade Taquitos
These crispy and cheesy Homemade Taquitos are baked—not fried—making them a healthier alternative packed with bold, spicy jackfruit, creamy refried beans, and melty cheese. Perfect as an appetizer or a main meal, they’re easy to prep ahead and freeze for quick weeknight dinners or party snacks.

Preheat the oven to 400°F and line a baking sheet with parchment paper.
Shred the jackfruit by hand or with a fork, discarding tough core pieces.
On the baking sheet, toss jackfruit with olive oil, garlic, cumin, coriander, cayenne, salt, and pepper. Add green chiles and spread evenly. Bake for 15–18 minutes until lightly golden brown.
Warm tortillas in the oven for 3–5 minutes or microwave in a damp paper towel for 30 seconds to make them pliable.
Spread a strip of refried beans near the left edge of each tortilla. Add roasted jackfruit, cheese, and scallions. Roll tightly and place seam-side down on a new parchment-lined baking sheet.
Spray generously with olive oil spray. Bake for 20 minutes until golden brown and crispy on the edges.
Top with desired toppings and serve immediately.
