In a large bowl, mix warm water, yeast, and sugar. Stir gently and let it sit for 5–7 minutes until foamy. This shows the yeast is active and ready.
Add flour, salt, and olive oil to the yeast mixture. Mix until a sticky dough forms. If using a mixer, knead on medium speed for about 5 minutes. If kneading by hand, knead on a floured surface for 8–10 minutes until smooth and elastic.
Place the dough in an oiled bowl, cover, and let it rise in a warm place for about 1 hour, or until doubled in size.
Grease a 9×13-inch baking pan with olive oil. Press the dough into the pan using your fingers. Dimple the surface with your fingertips, drizzle with olive oil, and sprinkle with rosemary and flaky salt if using. Cover and let rise again for 20–30 minutes.
Preheat oven to 400°F (200°C). Bake for 18–22 minutes until golden brown on top. Remove from oven and cool completely before slicing.
Once cooled, slice the focaccia horizontally like a large sandwich bun, or cut into individual sandwich squares and slice each piece in half.
Spread mayonnaise or garlic aioli on the bottom half of the bread. Layer chicken or turkey, mozzarella, tomatoes, roasted peppers, and basil. Add black pepper and a light drizzle of balsamic glaze if using. Place the top bread layer on and press gently.
Use a sharp serrated knife to cut into portions. Serve immediately or wrap tightly for later.
