Jalapeno Poppers are my obsession! Fresh jalapeños are sliced in half and filled with a rich, creamy cheese filling, then topped with a crisp Panko topping. These poppers are baked until golden and bubbly—the perfect game day snack or crowd-pleasing appetizer!

Preheat the oven to 400°F (204°C).
Wearing gloves, slice the jalapeños in half lengthwise. Using a small spoon, scoop out the seeds and inner membranes to reduce heat (or leave some for extra spice).
In a mixing bowl, combine cream cheese, garlic powder, shredded cheddar cheese, and chopped chives (if using). Mix until smooth and well blended.
In a separate small bowl, mix Panko bread crumbs with melted butter until evenly coated.
Fill each jalapeño half generously with the cheese mixture. Place on a parchment-lined baking sheet.
Sprinkle the buttered Panko crumbs over the top of each stuffed jalapeño half.
Bake for 18–22 minutes, or until the peppers are tender and the topping is golden brown.
Let cool for 5–10 minutes before serving. Serve with ranch or blue cheese dressing if desired.
