Cut the silken tofu into small, bite-sized pieces and set aside.
Heat a wok over medium heat and add cooking oil and chili oil until they shimmer.
Add chopped garlic and ground pork, stir-frying until pork is halfway cooked and garlic is fragrant.
Sprinkle in Sichuan spicy bean paste, chili powder, and light soy sauce. Stir-fry for 1-2 minutes.
Gently incorporate tofu pieces and water, stirring carefully to avoid breaking the tofu.
Reduce heat and let it simmer for about 3-5 minutes until the sauce thickens.
Finish with Sichuan peppercorns, chopped leeks or scallions, and salt, stirring gently.
Serve hot over steaming rice.
