Sort and rinse the dried Great Northern beans. Place them in a large bowl and cover with water by at least 2 inches. Soak overnight. Drain well.
Add the soaked beans to the slow cooker.
Add the dried onion flakes, green chiles, frozen white corn, garlic powder, cumin, oregano, cayenne pepper, chicken broth, half-and-half, and chicken breasts. Stir to combine.
Cover and cook on LOW for 8 to 10 hours, or until the beans are tender and the chicken is cooked through.
Remove the chicken breasts from the slow cooker and shred with two forks. Return the shredded chicken to the slow cooker.
Stir in the shredded Monterey Jack cheese until melted and creamy.
Ladle into bowls and serve with your favorite toppings.
