In a large pot or Dutch oven, combine chicken thighs, ½ white onion, garlic, bay leaf, kosher salt, and water. Boil, then reduce to low and cook for 10-12 minutes until chicken reaches 165°F. Shred chicken when cooled.
Heat 1 tablespoon of oil in a skillet over medium-high heat, add tomatoes, jalapeño (if using), and diced onion. Cook for 5 minutes, stirring until onion softens and tomatoes reduce.
