Fried Tofu
Crispy, golden outside and tender inside, this fried tofu is the sort of recipe you make when you want something impressive with little fuss, perfect for weeknight dinners turned special, for board-worthy photos, or for guests who appreciate clean flavors and a satisfying crunch.

Press the tofu for at least 20 minutes before starting, or wrap in a clean towel and weight it to remove excess moisture so the cubes crisp up evenly.
Pat the tofu dry and cut into 1-inch cubes, toss gently with salt and pepper, then lightly coat each piece in cornstarch, shaking off excess.
Heat a wide skillet over medium heat and add the neutral oil, let it shimmer but not smoke so the tofu browns slowly.
Arrange tofu cubes in a single layer, leaving space between pieces, cook without moving for 3–4 minutes until the bottoms are golden, then turn to brown all sides, about 8–10 minutes total.
Transfer the cooked tofu to a wire rack or paper towel briefly to drain any excess oil.
Whisk together soy sauce, rice vinegar, toasted sesame oil, and honey or sugar if using, taste and adjust acidity or salt.
Plate the tofu on a matte white plate, spoon a little sauce underneath or to the side, scatter sliced scallions and toasted sesame seeds over the top, serve immediately.
