Preheat oven to 375°F (190°C). Lightly butter the bottom and sides of your 9x13 inch baking dish.
Peel, core, and slice the apples into roughly 1/4-inch thick pieces, ensuring uniform size for even cooking.
In a large bowl, combine the sliced apples with the 1/2 cup brown sugar, 1/4 cup granulated sugar, 2 Tbsp flour, lemon juice, 1 tsp cinnamon, nutmeg, and a pinch of salt. Toss gently until evenly coated. Set aside.
In a separate medium bowl, whisk together 1 cup flour, rolled oats, the remaining sugars, 1/2 tsp cinnamon, and 1/2 tsp salt for the topping.
Add the 8 Tbsp of cold, cubed butter to the dry mixture.
Use your fingers, a fork, or a pastry blender to cut the butter into the flour mixture until it resembles coarse crumbs, with some pea-sized pieces of butter still visible. Do not overmix.
Pour the prepared apple mixture into the buttered baking dish, spreading it into an even layer.
Distribute the crumble topping evenly over the apples. Do not press it down, keeping it loose for maximum crispness.
Bake for 45–50 minutes at 375°F (190°C), until the topping is deep golden brown and the apple filling is visibly bubbling around the edges. If the topping browns too quickly, cover lightly with foil for the last 10 minutes.
Remove from the oven and let it cool on a wire rack for at least 10 minutes before serving. This cooling time is essential for the sauce to thicken slightly.
