Shape the Gorditas: Divide dough into 6–8 equal balls and flatten each to about ½ inch thick.
Cook on a Hot Griddle: Preheat a skillet over medium-high heat and cook each gordita for 1–2 minutes per side until lightly golden and slightly puffed.
Create the Pocket: While warm, gently slit one edge with a knife to form a pocket.
Fill & Serve: Stuff your gorditas with your chosen fillings and add toppings as desired.
