In a pot, add oil over medium-high heat.
Add the pork and sear until it is browned on all sides.
Add the vinegar, soy sauce, garlic, bay leaf, peppercorns, sugar, and water and bring it to a boil.
Reduce the heat to medium-low, cover with the lid and let it simmer for an hour.
Remove the lid and continue simmering for another 30 minutes until the sauce reduces and thickens to the desired consistency.
Ladle into a bowl or over a bowl of plain steamed rice and serve!
When preparing the pork shoulder, cut them into a uniform size for even cooking.
Either use a wide pan or cook the pork shoulder in batches. This way, you’ll sear the meat beautifully on all sides without crowding the pot.
To cook off the strong vinegar flavour, let it boil uncovered without stirring before adding the soy sauce and water.
